Chicken Fried Steak (or Chicken)

Ingrediens:

  • Cube steak (Or chicken) 6 – 8 pieces, 3 x 4 inches and no more than ½ inch thick
  • 1 ½ - 2 cups flour
  • 1 ½ teaspoons coarse ground black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • 4 eggs
  • ¼ cup milk, half & half or light cream
  • ¼ teaspoon coarse black pepper 
  • ¼ teaspoon garlic powder
  • 2 cups Italian style bread crumbs
  • Cooking oil (enough to be ½ inch deep in a large skillet)
  • 2 ½ pounds of potatoes, peeled and quartered
  • 2 cans of corn
  • White peppered gravy (see recipe below)
Gravy ingredients:
  • 4 Tablespoons butter
  • 4 Tablespoons 
  • 2 Teaspoons coarse ground pepper
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • 2 ½ cups milk

Instructions:

  • Start cooking potatoes (so they are ready to mash when meat is done)
  • Heat corn
  • Mix flour, pepper, garlic powder and salt in a bowl 
  • In a second bowl, whisk eggs, milk, black pepper and garlic powder 
  • Pour bread crumbs into a third bowl, pan or on a large plate
  • Heat oil on medium flame (until a drop of water sizzles when dropped into oil)
  • Dredge the cube steak pieces in the flour mixture.  I like to flip the pieces over a few times and press my knuckles into the meat to ensure the pieces are well covered.
  • After dredging each piece, dip it in the egg wash quickly then coat with breadcrumbs.  As I do while dredging the meat in the flour mixture, I also like to press the meat into the breadcrumbs, flipping it several times to make sure it is fully coated.
  • Once all pieces of meat are coated in bread crumbs, place 3 – 4 pieces in hot oil and fry until golden brown on bottom, flip and cook until golden brown on both sides.  Remove from oil and place on paper towel to drain any excess oil.
  • While meat is frying, start making gravy.
  • The Gravy:
    • Melt butter in medium sauce pan
    • When butter is melted, whisk in flour, pepper, salt and garlic
    • Slowly pour milk into flour/butter mixture, turn up heat to medium, and whisk occasionally.
    • Cook for 5 – 7 minutes until gravy thickens. 
  • Mash potatoes.
  • Plate potatoes, steak, corn……add gravy…..enjoy!!!
